Sheet Pan Kung Pao Chicken

This sheet pan dinner recipe takes kung pao chicken to a whole new level – it is easy, quick, tastes INCREDIBLE, a healthy dinner option, and makes enough for leftovers to bring to work!

Easy dinners are my jam.  So much I wrote a whole ebook on 30 Minute 5 Ingredient Dinners – have you checked it out yet?  If not you definitely should because it is perfect for busy days when you are in a pinch.  And did I mention each recipe comes with a wine tasting from a certified sommelier? Because what do busy days call for more than a quick meal and a big glass of vino?  Exactly.

And this sheet pan recipe provides you the same!  This kung pao chicken only requires a handful of ingredients, it is all cooked on one pan, and it is minimal prep!

Most Kung Pao chicken recipes use really complicated or really unhealthy sauces.  This one I borrowed from my friend over at Detoxinista and added something a little extra to make it nice and thick for ya, but it is made with simple ingredients you probably have on hand and they are all healthy!

Let’s Make Some Sheet Pan Kung Pao Chicken!

So here are your tips for making the perfect dinner the first time around.  Start with your veggies.  Your snap peas will be good to go as is.  For your bell peppers, cut them in even squares.  And cut your broccoli into small florets.  We want everything to cook evenly and quickly enough.

Same for your chicken.  Cut them into squares about 1-1.5 inches on both sides.  We don’t want them too big because we want them to be fully cooked of course but we don’t want any over cooked!

The sauce I got directly from this recipe.  I just added some corn starch to make it thicker so it would stick to the ingredients better.  If you don’t like corn starch you can skip that step but I’d reserve some sauce to pour on once it is plated!

You can eat this alone as a stir fry, or prepare some rice to top it with.  Neil used white rice and I used my favorite Banza chickpea rice when we made this.  It would also be good over quinoa too!

In addition to the ingredients you may need:

  • a large cookie sheet to bake on
  • parchment paper (or oil to line the cookie sheet with)

This sheet pan dinner recipe takes kung pao chicken to a whole new level – it is easy, quick, tastes INCREDIBLE, a healthy dinner option, and makes enough for leftovers to bring to work!


Ingredients

Scale
  • 8 oz (about 2.5 cups) snap peas
  • 2 red bell peppers
  • 3 cups broccoli florets
  • 2 medium chicken breasts (11.5 lb)
  • Kung Pao Sauce*
    • 1/2 cup gluten free soy sauce
    • 4 tbsp balsamic vinegar
    • 4 tbsp maple syrup
    • 1 tsp garlic powder
    • 1 tsp ground ginger
    • 2 tsp red pepper flakes
    • 2 tsp sesame oil
    • 1.5 tbsp corn starch
  • Sesame seeds to garnish (optional)

Instructions

  1. Preheat oven to 450F.
  2. Cut bell peppers into squares, broccoli into florets, and chicken into cubes.  Combine with snap peas and lay out on a cookie sheet lined with parchment paper.
  3. Make kung pao sauce by combining all ingredients in a small bowl and whisking until mixed thoroughly.  Pour half of the sauce over the chicken and veggies, and stir.
  4. Cook for 15 minutes, remove from oven, add the remaining sauce (re-whisk in case corn starch has settled), toss, and cook for additional 15 minutes.
  5. Remove and enjoy immediately, or serve over rice.

Notes

*The Kung Pao sauce used in this recipe is simply a double batch of the sauce from this Detoxinista recipe plus the added corn starch for thickening. That recipe doesn’t lay out the sauce ingredients separately so I just wanted to reiterate them here in my ingredients.  But that recipe is amazing so you should try it too!
